  • 1 lb salmon (cubed)
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • 1 tsp sesame oil
  • 1 ½ cup uncooked sushi rice
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • 3 large nori sheets
  • Furikake and green onion for garnish

Instructions

  1. Cook sushi rice according to package instructions; set aside.
  2. In a microwave-safe bowl, mix rice vinegar and sugar; microwave until dissolved.
  3. Combine cooked rice with vinegar mixture; stir well.
  4. Preheat oven to 400°F (200°C).
  5. In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil; mix well.
  6. Cut nori sheets into squares and arrange in greased muffin tin slots.
  7. Spoon sushi rice into each nori square, then top with salmon mixture.
  8. Bake for about 15 minutes until golden brown.
