Ingredients

  • 1 English cucumber
  • 2 cups cherry tomatoes
  • ½ cup kalamata olives
  • ¼ red onion
  • 5 ounces feta cheese
  • 1 large avocado
  • Olive oil
  • Red wine vinegar
  • Lemon juice
  • Dried oregano
  • Salt
  • Black pepper

Instructions

  1. Wash all vegetables thoroughly. Slice the cucumber into half moons and halve the cherry tomatoes. Halve the kalamata olives and thinly slice the red onion.
  2. Cut feta cheese into ½ inch cubes. Dice the avocado after removing the pit.
  3. In a large mixing bowl, combine all prepared vegetables, cubed feta cheese, and diced avocado.
  4. In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, dried oregano, salt, and black pepper to make the dressing.
  5. Pour dressing over salad ingredients and toss gently until well-coated.
