  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley or cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. In the dish, combine uncooked rice, chicken broth, olive oil, garlic, dill, oregano, cumin, salt, and pepper.
  4. Evenly distribute bite-sized chicken pieces over the rice mixture.
  5. In a bowl, whisk together Greek yogurt, grated cucumber, and lemon juice until smooth; pour over the dish.
  6. Cover tightly with aluminum foil and bake for 35–40 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Optional: Remove foil and sprinkle feta cheese; bake uncovered for an additional 5 minutes.
  8. Garnish with fresh herbs before serving.
