  • 1/2 cup chopped red onion
  • 1 jalapeño, seeded and chopped
  • 2 minced cloves garlic
  • 1/4 cup cotija cheese (plus extra for topping)
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayo
  • Juice from 1 lime
  • Spices: chili powder, paprika, sea salt, black pepper
  • Fresh cilantro

Instructions

  1. If using fresh corn, boil in water for 5-7 minutes until tender; let cool. For frozen corn, heat according to package instructions.
  2. Chop red onion, jalapeño, and mince garlic; combine in a mixing bowl.
  3. Cut kernels off cooled corn (if fresh) and add to the bowl along with cotija cheese, Greek yogurt, mayo, lime juice, and spices. Mix until well combined.
  4. Fold in chopped cilantro and adjust seasoning if needed. Serve chilled or at room temperature with additional cotija cheese on top.
