- 3 cups day-old cooked rice

- 4 green onions, chopped
- 2 tbsp low-sodium soy sauce
- 1 tbsp mirin
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
Instructions
- Chop chicken into bite-sized pieces and prepare mixed vegetables.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook chicken until golden brown and fully cooked (about 5-7 minutes). Remove from the skillet.
- In the same skillet, add another tablespoon of oil if needed and stir-fry mixed vegetables and minced garlic for 3-4 minutes until tender.
- Add day-old rice to the skillet along with soy sauce and mirin; mix thoroughly while breaking up clumps.
- Return cooked chicken to the skillet, tossing everything together over medium heat for an additional couple of minutes until heated through.
- Serve hot, garnished with chopped green onions.
