  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 3 cups day-old cooked rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 4 green onions, chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced

Instructions

  1. Chop chicken into bite-sized pieces and prepare mixed vegetables.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook chicken until golden brown and fully cooked (about 5-7 minutes). Remove from the skillet.
  3. In the same skillet, add another tablespoon of oil if needed and stir-fry mixed vegetables and minced garlic for 3-4 minutes until tender.
  4. Add day-old rice to the skillet along with soy sauce and mirin; mix thoroughly while breaking up clumps.
  5. Return cooked chicken to the skillet, tossing everything together over medium heat for an additional couple of minutes until heated through.
  6. Serve hot, garnished with chopped green onions.
