  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers (mixed colors)
  • ½ cup diced red onions
  • ¼ cup extra virgin olive oil
  • ¼ cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain all canned beans in a colander.
  2. Dice the cucumbers, bell peppers, and red onions into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, basil, salt, and pepper until well combined.
  4. In a large mixing bowl, combine the drained beans with chopped vegetables. Pour the dressing over the mixture and toss gently until fully coated.
