Ingredients
Scale
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cups fresh baby spinach
- 8 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1 cup low-sodium chicken broth
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper, then cook in a skillet over medium heat for about 5-7 minutes per side until golden brown. Ensure internal temperature reaches at least 165°F (74°C).
- Add fresh spinach to the skillet and sauté until wilted (about 3 minutes).
- In a bowl, mix softened cream cheese, chicken broth, and garlic powder until smooth.
- Slice cooked chicken into bite-sized pieces and combine with wilted spinach. Pour the cream cheese mixture over the top and sprinkle with shredded cheese.
- Transfer to the prepared baking dish, cover with foil, and bake for 25-30 minutes. Remove foil during the last few minutes to allow cheese to bubble.
