- 1 cup quinoa or brown rice
- 2 cups mixed fresh vegetables (bell peppers, zucchini, carrots)
- 1 cup protein of choice (grilled chicken, chickpeas, or tofu)
- 1/4 cup tahini
- 1–2 tsp chipotle powder (adjust to taste)
- 2 tbsp lemon juice (freshly squeezed)
- 1 garlic clove (minced)
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Cook the quinoa or brown rice according to package instructions.
- Preheat the oven to 425°F (220°C). Wash and chop the vegetables into bite-sized pieces.
- Spread the vegetables on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes until tender.
- While roasting, prepare your protein: grill chicken until cooked through or pan-fry chickpeas/tofu until golden brown.
- In a bowl, whisk together tahini, lemon juice, minced garlic, chipotle powder, and water to desired consistency.
- Assemble your bowls by layering grains at the bottom followed by roasted vegetables and protein. Drizzle generously with tahini sauce before serving.
