  • 2 tbsp water (for topping)
  • 1 cup heavy cream (for ganache)
  • 1.5 cups semi-sweet or dark chocolate (chopped) (for ganache)
  • 1 tbsp unsalted butter (optional, for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, mix softened butter until creamy; add eggs one at a time.
  4. Stir in vanilla extract, oil, blackberry puree, and buttermilk until combined.
  5. Gradually add dry ingredients to wet ingredients until just mixed.
  6. Divide batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. Cool cakes before topping with the berry mixture (blackberries cooked with sugar and lemon juice) and ganache.
