  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Chill in the refrigerator.
  2. Boil water in a large pot and cook the shrimp for about 2 to 3 minutes until pink and cooked through.
  3. While shrimp cooks, prepare an ice water bath in a bowl. Once cooked, transfer the shrimp into the ice bath for about 3 minutes to cool.
  4. Drain the shrimp and combine them in a mixing bowl with diced cucumber, green onions, and chilled dressing. Stir well to coat.
