Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- 1 large lime (zested and juiced)
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- ¼ teaspoon kosher salt
Instructions
- Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Chill in the refrigerator.
- Boil water in a large pot and cook the shrimp for about 2 to 3 minutes until pink and cooked through.
- While shrimp cooks, prepare an ice water bath in a bowl. Once cooked, transfer the shrimp into the ice bath for about 3 minutes to cool.
- Drain the shrimp and combine them in a mixing bowl with diced cucumber, green onions, and chilled dressing. Stir well to coat.
