  • 3 & 1/2 pounds boneless pork shoulder
  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup finely chopped cilantro
  • 1/4 cup finely chopped mint leaves
  • 8 minced garlic cloves
  • 1 tablespoon minced oregano (or 2 teaspoons dried)
  • 2 teaspoons ground cumin
  • Kosher salt and pepper

Instructions

  1. Prepare the marinade by blending olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper in a food processor or ziplock bag.
  2. Marinate the pork in the mixture for at least several hours or overnight in the refrigerator.
  3. Preheat your oven to 425°F (220°C) and set up a wire rack over a rimmed baking sheet.
  4. Remove pork from marinade and season generously with salt and pepper. Roast for 30 minutes until browned.
  5. Lower the oven temperature to 375°F (190°C) and continue roasting for an additional 1 hour and 20–30 minutes until cooked through (internal temperature reaches 160°F).
  6. Let the pork rest covered with aluminum foil for at least 20 minutes before slicing.
