  • 16 oz extra firm tofu
  • 1 tbsp tamari or soy sauce
  • 1 tbsp cornstarch
  • 3 tbsp gluten-free breadcrumbs
  • 1/4 cup low sodium tamari or soy sauce
  • 1/4 cup gochujang (or red chili paste)
  • 1 tbsp tomato paste
  • 2 tbsp vegetable broth or water
  • 3 tbsp honey (or maple syrup for vegan)
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp minced garlic
  • 1 tsp fresh grated ginger
  • 1 tsp cornstarch
  • 1 tsp water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drain and press the tofu to remove excess moisture, then cut into 1-inch cubes.
  3. Toss the tofu with tamari or soy sauce, then coat with cornstarch and breadcrumbs.
  4. Arrange the tofu on a parchment-lined baking sheet and bake for 25 minutes.
  5. While the tofu bakes, whisk together gochujang sauce ingredients in a small pot and heat until thickened.
  6. After baking, combine the tofu with half of the sauce and serve with rice and veggies.
