  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 1 medium carrot
  • 3 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk)
  • Dried basil, smoked paprika, salt, and pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange halved tomatoes cut side up on a baking sheet. Cut the top off the garlic head, drizzle with olive oil, season with salt, and roast for about 30 minutes until caramelized.
  2. In a large pot over medium heat, sauté chopped onions and carrots in olive oil until soft (5-7 minutes).
  3. Squeeze roasted garlic into the pot, add roasted tomatoes and their juices, then pour in the broth. Simmer for about 10 minutes.
  4. Blend until smooth using an immersion blender or traditional blender. Stir in cream (or coconut milk), basil, smoked paprika, salt, and pepper; heat through without boiling.
