- 2 cups shredded chicken (or beef/turkey)
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheddar cheese (or Monterey Jack)
- 1 package Velveeta cheese
- 1 can chopped green chilies
- 1 can diced tomatoes with green chilies
- 8 tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine shredded chicken and taco seasoning. Mix in sour cream until blended.
- In another bowl, mix shredded cheddar, Velveeta cheese, and chopped green chilies.
- Spread diced tomatoes on the bottom of a baking dish. Fill each tortilla with chicken mixture and cheese sauce, roll tightly, and place seam-side down in the dish.
- Pour remaining cheese sauce over tortillas and sprinkle additional cheese if desired.
- Bake for about 25 minutes until golden and bubbly.
