  • 2 cups heavy cream (35%)
  • 6 tbsp pesto sauce
  • 1 green bell pepper (diced)
  • 1 red onion (diced)
  • 2 tsp salt (divided)
  • 1 1/2 tbsp all-purpose flour
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano
  • 1 tsp black pepper
  • Freshly chopped parsley (a handful)
  • Grated Parmesan for topping (optional)

Instructions

  1. In a large pot, bring salted water to a boil.
  2. Add the penne pasta and cook until al dente according to package instructions. Reserve 1/2 cup of the pasta water before draining.
  3. Return the pot to medium heat. Add diced green bell pepper and red onion. Sauté until softened, about 3-4 minutes.
  4. Stir in pesto sauce into the sautéed vegetables. Gradually add heavy cream while stirring continuously. Mix in reserved pasta water until well combined.
  5. Sprinkle all-purpose flour into the sauce while whisking to avoid lumps. Season with garlic powder, dried oregano, and black pepper. Let it simmer for about 2-3 minutes until thickened.
  6. Add cooked penne pasta into the sauce mixture. Toss gently to coat all pasta evenly with creamy pesto sauce.
