  • 4 (6-oz.) salmon fillets
  • Kosher salt and freshly ground black pepper
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. butter
  • 3 cloves garlic, minced
  • 1 tbsp. all-purpose flour
  • 1 1/4 c. heavy cream
  • Juice and zest of 1 lemon
  • 2 tbsp. chopped dill
  • Crushed red pepper flakes

Instructions

  1. Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the salmon skin-side up until golden, about 6 minutes. Flip and cook until crispy, about another 5 minutes; remove from skillet.
  2. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook for about 30 seconds until fragrant. Stir in flour for another 30 seconds.
  3. Gradually whisk in heavy cream, bringing it to a simmer until slightly thickened (2 to 4 minutes). Mix in lemon juice, zest, dill, salt, and pepper.
  4. Return the salmon to the skillet, letting it simmer briefly to meld flavors before serving with crushed red pepper flakes on top.
