Ingredients
- 500g Chicken Breasts (bite-sized pieces)
- 200g Full-fat Plain Yogurt
- 200ml Coconut Cream
- 100ml Double Cream
- 1 medium Onion (chopped)
- 3 cloves Garlic (minced)
- 1 tbsp Minced Ginger
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Garam Masala
- 1 teaspoon Mild Chili Powder
- 1 teaspoon Ground Turmeric
- Salt to taste
- 1 teaspoon White Pepper
- 200g Tomato Purée
- Ghee or Sunflower Oil
- Fresh Coriander for garnish
Instructions
- Gather and prepare all ingredients: chop onions and mince garlic.
- In a large skillet over medium heat, heat ghee or sunflower oil. Sauté the onions until translucent.
- Add minced garlic and ginger; cook until fragrant.
- Incorporate chicken pieces along with salt and spices. Cook until browned.
- Stir in tomato purée and let simmer for 5 minutes.
- Lower the heat and add yogurt, coconut cream, ground almonds (if using), sugar, and double cream. Mix well.
- Simmer on low heat for another 5-10 minutes until thickened. Garnish with coriander before serving.
