  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • Pinch of salt
  • 4 slices pineapple
  • 1 avocado (sliced)
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. In a mason jar, combine orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt. Blend until smooth using an immersion blender.
  2. Preheat the grill to medium-high heat.
  3. Brush pineapple slices with olive oil and grill for 2 minutes on each side until marked.
  4. Grill corn directly on the grill for approximately 5 minutes per side until slightly charred.
  5. Remove grilled ingredients and let cool before slicing corn off the cob.
  6. In salad bowls, layer mixed greens and top with grilled pineapple slices, corn kernels, pepitas, blueberries, and avocado.
  7. Drizzle with creamy citrus dressing before serving.
