  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup butternut squash puree
  • 1 cup full-fat coconut milk
  • 1/2 cup tomato puree
  • Spices: garam masala, turmeric, cumin powder, coriander powder, chili powder
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add chopped onions and sauté until translucent (about 5 minutes).
  2. Stir in ginger and garlic; cook for an additional 1–2 minutes.
  3. Add chicken pieces and brown on all sides (8–10 minutes).
  4. Incorporate garam masala, turmeric, cumin, coriander, chili powder, salt, and pepper; cook for another 1–2 minutes.
  5. Lower heat and add butternut squash puree, coconut milk, and tomato puree; stir to combine.
  6. Simmer for about 20 minutes until chicken is cooked through and sauce thickens.
  7. Stir in butter before serving; adjust seasoning as needed.
  8. Serve hot with basmati rice or naan.
