  • 4 medium overripe bananas (mashed)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 4 oz cream cheese (softened)
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and line a muffin pan with liners.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, mix mashed bananas with granulated sugar and brown sugar. Add the egg, oil, and vanilla extract. Gradually incorporate the dry ingredients until just combined.
  4. In another bowl, beat softened cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin tins 3/4 full with banana batter and top each with a tablespoon of cream cheese mixture. Swirl gently using a toothpick.
  6. Bake for 16-18 minutes or until a toothpick comes out clean.
