  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 3/4 cup white chocolate chips
  • 3/4 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl or stand mixer, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. Gradually add flour, baking powder, baking soda, salt, cinnamon, and oats. Mix until just combined.
  4. Gently fold in white chocolate chips and dried cranberries.
  5. Chill the dough in the refrigerator for 30 to 60 minutes.
  6. Using a cookie scoop, portion out dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10 to 12 minutes until edges are set but centers remain slightly soft. Cool on the pan for a few minutes before transferring to a wire rack.
