  • ⅓ cup granulated sugar (for streusel)
  • ½ teaspoon cinnamon (for streusel)
  • ¼ cup unsalted butter (melted, for streusel)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin pan with paper liners.
  2. For the streusel topping: In a small bowl, combine flour, sugar, and cinnamon. Add melted butter and mix until crumbly. Chill until ready to use.
  3. In a large bowl, mix flour, baking powder, and salt; set aside.
  4. In another bowl, whisk egg, orange zest, and sugar until combined. Add yogurt, orange juice, and oil; mix until pale yellow.
  5. Gently fold wet ingredients into dry ingredients until just combined.
  6. Toss cranberries with flour in a small bowl; gently fold into the batter.
  7. Fill muffin tins two-thirds full and top generously with streusel topping.
  8. Bake at reduced heat of 375°F (190°C) for about 18-20 minutes or until a toothpick comes out clean.
