- 2 lb boneless beef shoulder or chuck (cut into 1 1/2-inch pieces)
- Kosher salt
- Freshly ground black pepper
- 1/4 cup olive oil (divided)
- 4 medium onions (halved and thinly sliced)
- 2 tablespoons all-purpose flour
- 1 cup red Burgundy wine (such as Pinot Noir)
- 6 medium carrots (peeled and cut into 1-inch pieces)
- 1 clove garlic
- 1 bouquet garni (tied bundle of herbs: thyme, bay leaf, parsley)
- Water
- Demi-glace (optional)
Instructions
- Pat the beef dry with paper towels; season generously with salt and pepper.
- In a Dutch oven over high heat, heat half the oil until shimmering. Sear the beef in batches until browned on all sides; transfer to a plate.
- Lower heat to medium-high; add remaining oil and onions. Cook until softened and golden, about 10 minutes. Stir in flour and cook for another 4–5 minutes.
- Pour in wine, deglazing the pan by scraping up browned bits. Return the beef to the pot along with carrots, garlic, bouquet garni, and water (plus demi-glace if using).
- Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 2–2.5 hours until meat is fork-tender.
- Stir occasionally; adjust liquid levels if needed by adding water gradually.
- Discard bouquet garni before serving; taste for seasoning adjustments.
