  • 300 grams pasta
  • 300 grams broccoli
  • 1 fennel bulb
  • 200 grams halloumi cheese
  • 3 tablespoons pesto
  • 1 tablespoon olive oil
  • Olives
  • Roasted red peppers

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, boil water and cook broccoli florets for 3 minutes. Drain and rinse under cold water.
  3. Heat olive oil in a frying pan over medium heat and fry cubed halloumi until golden brown on all sides.
  4. In a mixing bowl, combine cooked pasta, broccoli, sliced fennel, olives, roasted red peppers, toasted pine nuts, and fried halloumi. Toss with pesto until evenly coated.
  5. Serve garnished with fresh basil.
