  • 2 cups granulated sugar

  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy; add eggs one at a time followed by vanilla and coconut extracts.
  4. Gradually mix in dry ingredients and coconut milk until well combined.
  5. Divide batter between pans and bake for 25–30 minutes until a toothpick comes out clean. Cool completely on wire racks.
  6. For frosting, beat cream cheese with powdered sugar until smooth; whip heavy cream separately until stiff peaks form, then fold into cream cheese mixture.
  7. Layer cakes with frosting in between; frost the top and sides of the cake and press toasted coconut onto the exterior.
  8. Chill for at least one hour before serving.
