- 2 pounds beef chuck roast (cubed)

- 2 cups beef broth
- ½ cup dry red wine
- 1 bay leaf
- ¼ cup chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 325°F (165°C).
- In a heavy pot or Dutch oven, heat olive oil over medium heat and sauté onions with salt until golden.
- Remove onions and brown the beef cubes in the same pot for about 5–10 minutes.
- Stir in the reserved onions and remaining ingredients, bringing the mixture to a boil.
- Cover the pot slightly ajar and transfer it to the preheated oven. Braise for about 1½ hours or until the beef is tender.
- Garnish with fresh parsley before serving.
