  • pounds onions (chopped)
  • 2 tablespoons olive oil
  • 2 pounds beef chuck roast (cubed)
  • ½ green pepper (chopped)
  • 3 cloves garlic (minced)
  • ½ tomato (diced)
  • 2 tablespoons sweet Hungarian paprika
  • 2 cups beef broth
  • ½ cup dry red wine
  • 1 bay leaf
  • ¼ cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a heavy pot or Dutch oven, heat olive oil over medium heat and sauté onions with salt until golden.
  3. Remove onions and brown the beef cubes in the same pot for about 5–10 minutes.
  4. Stir in the reserved onions and remaining ingredients, bringing the mixture to a boil.
  5. Cover the pot slightly ajar and transfer it to the preheated oven. Braise for about 1½ hours or until the beef is tender.
  6. Garnish with fresh parsley before serving.
