  • 5 strips bacon
  • 3 1/2 lbs beef chuck
  • 4 tablespoons unsalted butter
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 2 cups Burgundy wine
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • Cremini mushrooms
  • Frozen pearl onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook chopped bacon in a Dutch oven until browned; remove and reserve.
  3. Sear seasoned beef cubes in the same pot until browned on all sides; set aside.
  4. Sauté onions and carrots in remaining fat, adding garlic, tomato paste, and flour until well combined.
  5. Deglaze with wine, add stock and herbs, then return beef and bacon to the pot; cover and bake for about 2½ hours.
  6. In the last half hour, sauté mushrooms and pearl onions separately; add them to the stew before final cooking for an additional 45–60 minutes.
