  • 150g brown sugar
  • 3 tablespoons water
  • 1/2 teaspoon salt
  • 120g heavy cream
  • 480g whole milk
  • 5 tablespoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 180g heavy cream for topping
  • 1 tablespoon powdered sugar for topping
  • 1/2 teaspoon vanilla for topping
  • 1/8–1/4 teaspoon ground cinnamon for dusting

Instructions

  1. Prepare the crust by blending Biscoff cookies with melted butter until crumbly. Press into a pie pan and refrigerate.
  2. For the filling, cook brown sugar, water, and salt in a saucepan until caramelized. Whisk egg yolks with cornstarch and cinnamon, then temper with hot sugar mixture before combining everything back in the saucepan.
  3. Cook until thickened, then pour into the chilled crust and refrigerate for at least 6 hours.
  4. Serve topped with whipped cream and a dash of cinnamon.
