  • 450g skinless, boneless chicken breasts
  • 3 medium yellow peaches, pitted and diced
  • 1 sweet red bell pepper, diced
  • ¼ cup red onion, diced
  • 3 green onions, finely chopped
  • ½ bunch cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt
  • ½ teaspoon smoked paprika
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon butter
  • 2 cups cooked Jasmine rice
  • Fresh cilantro, chopped
  • 1 lime, sliced

Instructions

  1. Prepare the peach salsa by mixing diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt in a large bowl.
  2. Season chicken breasts with salt, black pepper, smoked paprika, and chili powder.
  3. Heat olive oil in a skillet over medium-high heat. Add seasoned chicken and cook undisturbed for 4 minutes until seared. Flip and cook an additional 2 minutes.
  4. Reduce heat to low; add lime juice and honey to the skillet. Stir frequently for 2 more minutes until chicken is cooked through.
  5. Remove from heat; stir in butter and chopped cilantro.
  6. To serve, layer cooked Jasmine rice in bowls topped with peach salsa and cilantro-lime chicken.
