- 450g skinless, boneless chicken breasts
- 3 medium yellow peaches, pitted and diced
- 1 sweet red bell pepper, diced
- ¼ cup red onion, diced
- 3 green onions, finely chopped
- ½ bunch cilantro, chopped
- 2 tablespoons freshly squeezed lime juice
- ¼ teaspoon chili powder
- ¼ teaspoon salt
- ½ teaspoon smoked paprika
- Freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon butter
- 2 cups cooked Jasmine rice
- Fresh cilantro, chopped
- 1 lime, sliced
Instructions
- Prepare the peach salsa by mixing diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt in a large bowl.
- Season chicken breasts with salt, black pepper, smoked paprika, and chili powder.
- Heat olive oil in a skillet over medium-high heat. Add seasoned chicken and cook undisturbed for 4 minutes until seared. Flip and cook an additional 2 minutes.
- Reduce heat to low; add lime juice and honey to the skillet. Stir frequently for 2 more minutes until chicken is cooked through.
- Remove from heat; stir in butter and chopped cilantro.
- To serve, layer cooked Jasmine rice in bowls topped with peach salsa and cilantro-lime chicken.
