  • 1 large lime (juice freshly squeezed)
  • 6 oz baby spinach
  • 1 cup pecan halves (toasted, some of them chopped finely)
  • 1/2 cup dried cranberries
  • 3 mandarin oranges (peeled and segmented)
  • 1/3 cup goat cheese (crumbled)
  • 1/3 cup pomegranate arils (or more)

Instructions

  1. In a large mixing bowl, whisk together 1/3 cup extra virgin olive oil, 3 tablespoons Dijon mustard, 3 tablespoons honey, and the juice of 1 large lime.
  2. Add 6 oz baby spinach to the bowl and gently toss until coated.
  3. Incorporate 1 cup toasted pecans, 1/2 cup dried cranberries, segmented mandarin oranges from 3 fruits, 1/3 cup crumbled goat cheese, and 1/3 cup pomegranate arils; mix gently.
