  • 2 cups all-purpose flour
  • 3/4 cup wheat starch
  • 1/2 cup powdered sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable shortening
  • 1 large egg white
  • 1 tablespoon vegetable oil
  • 1 1/3 cups semi-sweet melting chocolate chips
  • 1 cup heavy cream

Instructions

  1. In a mixing bowl, combine warm milk and yeast; let sit for about 5 minutes until frothy.
  2. In another bowl, mix flour, wheat starch, powdered sugar, baking powder, and salt.
  3. Add the yeast mixture and shortening to dry ingredients; mix well. Knead on a floured surface for about 10 minutes until smooth.
  4. Let the dough rise in a greased bowl covered with plastic wrap for about 90 minutes or until doubled in size.
  5. Meanwhile, prepare the filling by melting heavy cream with chocolate chips over medium heat until smooth; cool slightly.
  6. Punch down the risen dough and divide into equal parts (about 12). Roll each piece into a circle, place filling in the center, gather edges to seal.
  7. Steam buns lined with baking paper for about 30 minutes over boiling water.
