  • 1 cup granulated sugar

  • 1/3 cup unsweetened cocoa powder

  • 1/4 tsp baking powder
  • 1 1/2 cups heavy whipping cream
  • 8 oz semisweet chocolate
  • 3 tbsp milk
  • 2 tbsp powdered sugar
  • 4 oz semisweet chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix melted butter, sugar, eggs, and vanilla until smooth. Sift in cocoa powder, flour, salt, and baking powder; fold gently.
  3. Pour batter into the pan and bake for 20-25 minutes. Cool completely.
  4. For the mousse, warm milk and pour over chopped chocolate; stir until melted. Let cool.
  5. Whip cream with powdered sugar until soft peaks form. Fold into the cooled chocolate mixture.
  6. Spread mousse over cooled brownies; refrigerate for at least two hours.
  7. Prepare ganache by pouring hot cream over chopped chocolate; stir until smooth.
  8. Pour ganache over set mousse layer; refrigerate again until firm.
  9. Slice and serve chilled.
