  • 1/2 cup almonds
  • 1 vanilla bean
  • 400 grams ricotta cheese
  • 2/3 cup honey
  • 2 cups Greek-style yogurt
  • 100 grams dark chocolate (70% cocoa), chopped
  • 100 grams raspberries
  • 100 grams cherries, halved and pitted

Instructions

  1. Preheat your oven to 180°C (350°F). Line a loaf pan with baking paper.
  2. Roast the almonds on an oven tray for about 10 minutes until lightly browned. Let them cool and chop coarsely.
  3. In a food processor, blend the seeds from the vanilla bean with ricotta and honey until smooth. Transfer to a bowl.
  4. Fold in the chopped nuts, Greek yogurt, dark chocolate, raspberries, and cherries. Pour the mixture into the prepared pan and cover with foil.
  5. Freeze for at least 8 hours or overnight until firm.
  6. To serve, let the parfait sit for about 10 minutes before slicing.
