Ingredients
- 1/2 cup almonds
- 1 vanilla bean
- 400 grams ricotta cheese
- 2/3 cup honey
- 2 cups Greek-style yogurt
- 100 grams dark chocolate (70% cocoa), chopped
- 100 grams raspberries
- 100 grams cherries, halved and pitted
Instructions
- Preheat your oven to 180°C (350°F). Line a loaf pan with baking paper.
- Roast the almonds on an oven tray for about 10 minutes until lightly browned. Let them cool and chop coarsely.
- In a food processor, blend the seeds from the vanilla bean with ricotta and honey until smooth. Transfer to a bowl.
- Fold in the chopped nuts, Greek yogurt, dark chocolate, raspberries, and cherries. Pour the mixture into the prepared pan and cover with foil.
- Freeze for at least 8 hours or overnight until firm.
