  • 2 cups butter (room temperature)
  • 1 1/2 cups powdered sugar
  • 1 cup granulated sugar
  • 4 cups all-purpose flour
  • 14 oz baking caramel bits
  • 1/3 cup heavy whipping cream
  • 12 oz semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9×13 inch baking dish with parchment paper and spray with nonstick baking spray.
  2. In a large mixing bowl, beat together room temperature butter, powdered sugar, granulated sugar, and vanilla extract until well combined.
  3. Gradually add the flour until just incorporated; the dough should be crumbly but hold together.
  4. Press about 3-4 cups of dough into the bottom of the prepared pan evenly.
  5. Bake for approximately 25 minutes or until golden around the edges; let cool.
  6. In a saucepan over low heat, melt caramel bits and heavy cream together until smooth. Pour over the cooled shortbread base.
  7. Sprinkle chocolate chips evenly over the caramel layer, then dot with remaining shortbread dough.
  8. Bake again for about 35-40 minutes until golden brown on top. Let cool completely before cutting into bars.
