  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen fire-roasted corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, finely diced
  • 1 avocado, cubed
  • Juice of 2 limes
  • 1 tbsp maple syrup
  • Spices: cumin, chili powder, smoked paprika

Instructions

  1. In a medium mixing bowl, combine chickpeas, black beans, corn, cherry tomatoes, red onion, and cilantro.
  2. In a separate bowl, whisk together lime juice, maple syrup, cumin, chili powder, smoked paprika, and salt.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Chill in the refrigerator for at least one hour before serving.
  5. Just before serving, fold in cubed avocado.
