Ingredients

- 2 cups chopped English cucumber

Instructions
- Rinse and drain the chickpeas. Chop cucumber, dice tomatoes and red onion, and chop parsley.
- In a mixing bowl, combine chickpeas, cucumber, tomatoes, onion, and parsley.
- In a separate measuring cup, whisk together olive oil, lemon juice, garlic, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad mixture; toss gently until well combined. Serve chilled for the best flavor.
