  • 1 lb boneless skinless chicken breast (or thighs)

  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup half-and-half
  • lbs Yukon Gold potatoes (cubed)
  • 1½ cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large soup pot, cook bacon until crispy; set aside and reserve drippings.
  2. Season chicken with salt and pepper, sear in the same pot until golden brown; remove.
  3. Sauté onions, carrots, and celery in bacon drippings until softened. Add garlic, hot sauce, and Worcestershire sauce.
  4. Stir in flour until well combined; gradually add chicken broth followed by half-and-half.
  5. Add cubed potatoes; bring to boil then simmer until tender.
  6. Return chicken to pot; stir in cheese until melted. Garnish with reserved bacon bits.
