Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms (cremini or button)
- 1 cup Madeira wine
- 1 cup chicken broth
- 1 cup heavy cream

- 2 tablespoons olive oil
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat, then add the chicken and brown on each side for about 4-5 minutes. Remove and set aside.
- In the same skillet, sauté mushrooms until lightly browned, then stir in minced garlic.
- Pour in Madeira wine and simmer until reduced by half, then add chicken broth and thyme; simmer for another 5 minutes.
