  • 8 small chicken legs (or 4 large chicken thighs)
  • 6 medium dried guajillo peppers
  • 2 medium tomatoes
  • 1 small onion
  • 2 garlic cloves
  • 1 ½ tsp dried oregano
  • Juice of 1 orange
  • Juice of 1 lime

Instructions

  1. Prepare the guajillo peppers by removing stems and seeds. Soak them in hot water for 10 minutes.
  2. Blend the soaked peppers with tomatoes, onion, garlic, oregano, orange juice, lime juice, and salt until smooth.
  3. Strain the sauce into a cooking pan; add chicken legs ensuring they’re covered slightly by the sauce.
  4. Bring to a simmer and cook covered for about 40 minutes until the chicken is tender.
  5. Adjust seasonings as needed before serving.
