- 2 teaspoons (10ml) vanilla extract
- 1/2 teaspoon (2.5ml) maple extract, optional
- 1/2 cup (100g) granulated sugar for coating
- 1/2 teaspoon pumpkin or chai spice blend for coating
Instructions
- Start by preparing brown butter: melt butter in a saucepan over medium heat until it turns golden brown. Let it cool.
- Prepare pumpkin puree by blotting excess moisture with paper towels.
- In one bowl, whisk together flour, spice blend, baking soda, and salt. In another bowl, combine cooled brown butter, sugar, maple syrup, egg yolk, pumpkin puree, and vanilla extract.
- Gradually mix dry ingredients into wet ingredients until just combined. Chill dough for at least 8 hours.
- Preheat oven to 350°F (177°C). Scoop dough into balls, roll in spiced sugar coating, and bake for 12-14 minutes.
