  • 1/2 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sweetened shredded coconut (toasted)

Instructions

  7. Bake for 9-11 minutes until edges are set but centers are soft.
  8. Cool for a few minutes before transferring to a rack.
