Ingredients
- 2 slices back bacon
- 400g extra lean beef mince
- 3 shallots
- 1 carrot
- 2 small stalks celery
- 3 cloves garlic
- 400g chopped tomatoes (canned)
- 240ml chicken or beef stock
- 500g gnocchi
- 120g mature cheddar cheese
Instructions
- In a frying pan over medium-high heat, spray olive oil and fry the bacon until golden brown. Set aside.
- In the same pan, sauté shallots, carrot, and celery until softened. Add water if needed.
- Add garlic and ground beef to the pan; cook until browned.
- Stir in cooked bacon, mixed herbs, chopped tomatoes, tomato paste, stock, and balsamic vinegar. Bring to a boil; then simmer for 20 minutes.
- Stir in gnocchi; simmer for another 5-8 minutes until cooked through.
- Season with salt and pepper to taste.
- Transfer to a baking dish, top with grated cheddar cheese, and broil for about 4 minutes until melted and golden.
- Garnish with fresh basil before serving.
