  • 1 tablespoon olive oil
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh parsley for garnish

Instructions

  1. Boil tortellini in salted water according to package instructions (3-5 minutes). Drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and cook ribeye steak until browned (3-4 minutes). Remove from skillet.
  3. Sauté onion and bell pepper in the same skillet for about 5-6 minutes; add garlic and cook for another minute.
  4. Season vegetables with salt and pepper; add beef broth and simmer for 2-3 minutes.
  5. Lower heat and stir in heavy cream until thickened (2-3 minutes). Mix in provolone and Parmesan until melted.
  6. Return steak to skillet; mix in drained tortellini until well coated. Heat through for another few minutes.
