  • 150 ml whole milk
  • 4 chai tea bags
  • 135 g unsalted butter
  • 135 g light brown sugar
  • 2 large eggs
  • 200 g self-raising flour
  • Spices: cinnamon, ginger, cloves, cardamom, nutmeg
  • For the buttercream: icing sugar, additional chai-infused milk

Instructions

  1. Preheat your oven to 160C (fan) / 180C / 350F and line a cupcake tin with cases.
  2. Warm milk and steep chai tea bags for 10-15 minutes. Remove tea bags.
  3. In a bowl, cream softened butter and sugar until smooth. Add eggs and vanilla; mix well.
  4. In another bowl, whisk together flour and spices. Gradually add dry ingredients to the wet mixture along with the chai-infused milk.
  5. Fill cupcake cases evenly and bake for 20-25 minutes or until golden brown.
  6. Allow cupcakes to cool completely before frosting with spiced buttercream made from softened butter, icing sugar, spices, and chai milk.
