  • 2 red bell peppers (diced)
  • 1 cup canned black beans (rinsed and drained)
  • 15 ounces mandarin oranges (drained)
  • 1/3 cup freshly squeezed lime juice
  • 4 tablespoons reduced sodium soy sauce
  • 4 tablespoons extra virgin olive oil

Instructions

  1. Marinate chicken: Combine soy sauce, olive oil, brown sugar, and ginger in a ziptop bag. Add chicken breasts, seal tightly, and marinate for at least 30 minutes.
  2. Soak onions: Place sliced onions in water for about 30 minutes to mellow flavor.
  3. Make dressing: In a food processor, blend mango, lime juice, honey, cumin, coriander, cayenne pepper, and olive oil until smooth.
