  • 3 tbsp butter
  • 1/3 cup brown sugar
  • 2 tbsp butter
  • 2 tbsp dark rum
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the crust by mixing graham cracker crumbs with sugar and melted butter; press into a springform pan and bake for 8 minutes.
  2. Lower the oven temperature to 325°F (163°C). Beat cream cheese until smooth, gradually add sugar, then mix in eggs one at a time, followed by sour cream and vanilla.
  3. Pour the filling over the cooled crust and bake for 55-65 minutes until edges are set but center jiggles slightly. Allow to cool in the oven for an hour.
  4. Chill in the refrigerator for at least 4 hours or overnight.
  5. For caramelized bananas, melt butter with brown sugar in a skillet, add banana slices, and cook until golden. For the glaze, melt butter with brown sugar, stir in dark rum, and simmer.
  6. Assemble by topping cheesecake with caramelized bananas and drizzle with warm rum glaze before serving.
