  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • 8 ounces low-moisture mozzarella cheese (chunks)
  • 8 ounces provolone cheese (shredded)
  • ¼ cup freshly grated parmesan cheese
  • Fresh chopped basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, olive oil, basil pesto, minced garlic, salt, and pepper. Bake for 15 minutes until tomatoes are blistered.
  3. While baking, mix sour cream and chopped basil in a bowl. Stir in mozzarella, provolone, and parmesan until combined.
  4. Remove the tomatoes from the oven and mix in the cheese mixture. Top with halved cherry tomatoes.
  5. Return to the oven and bake for an additional 20 minutes until melted and bubbly. Garnish with fresh basil before serving.
