  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 8 oz imitation crab, chopped
  • 1/2 cup diced English cucumber
  • 1 avocado, sliced
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • Nori sheets (chopped)
  • Sesame seeds (for garnish)

Instructions

  1. Rinse the sushi rice in a mesh sifter until the water runs clear. Cook in a rice cooker with water.
  2. Once cooked, transfer rice to a rimmed baking sheet and mix with seasoned rice vinegar using a rice paddle.
  3. In a mixing bowl, combine Japanese mayonnaise and sriracha to make spicy mayo.
  4. Chop the imitation crab and cucumber; prepare nori as desired.
