  • 1 zucchini
  • 1 yellow squash
  • 1 red bell pepper
  • 1 red onion
  • 14 oz Andouille sausage
  • 2 Tbsp cooking oil, divided
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Slice zucchini and yellow squash into half-rounds; cut red bell pepper and onion into strips.
  2. In a large skillet, heat 1 Tbsp oil over medium heat. Add sliced Andouille sausage and cook until browned. Remove from skillet.
  3. Toss the vegetables with remaining oil and seasonings in a bowl.
  4. Sauté seasoned vegetables in the same skillet until slightly tender.
