  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 4 cups chicken or vegetable stock
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, bell pepper, celery, and carrot for about 5–7 minutes until softened.
  2. Stir in the diced potatoes and combine well.
  3. Pour in the stock until potatoes are submerged. Bring to a boil then reduce heat to simmer.
  4. Add seasoning (Cajun seasoning, salt, pepper) and let simmer for 20–25 minutes until potatoes are tender.
  5. Blend partially using an immersion blender or standard blender for desired texture.
  6. Stir in heavy cream and cheddar cheese until melted and heated through.
  7. Taste for seasoning adjustments before serving hot.
